A small cheese flavored roll, chipa or chipá is a traditional bread from Argentina and Paraguay.

This is a special starch blend product developed to make Chipa Bread, it gives the chipa greater volume, crispness, sponginess and color.

Chipa is a type of small baked small roll with cheese flavor very popular snack and breakfast food in Paraguay and Argentina. The recipe has been around since the 18th century and its origins lie with the Guaraní people of Asunción.

The original name is from Guarani chipa. A small chipa can be called a chipita. In Santa Cruz de la Sierra, Bolivia, the term clavapé is often used. In some parts of Argentina it is called chipá or chipacito when it is small.

Chipa Bread Recipe

250g of CODIPSA Premium Chipero Starch,
3 tbsp. of butter,
2 eggs,
50g fresh cheese,
50g of Paraguayan cheese (If you can't find Paraguayan cheese, use a mixture of grated mozzarella and grated parmesan)
50g Sardinian cheese (you can substitute Parmesan, Asiago, Grana Padano or any Pecorino cheese)
50g blue cheese,
2 tbsp. milk,
1 tsp. of salt,
1 pinch of anise.⁣⁣

1- In a bowl, mix the butter and cheeses.⁣⁣
????- Add the eggs one at a time and continue mixing until they are incorporated into each other.⁣⁣
????- Gradually add the starch, salt and anise.⁣⁣
????- Add the milk and knead until the dough comes off your hands.⁣⁣
????- Bake at 220°C for 10 to 15 minutes approx.⁣⁣
