The term Cajun derives from an American ethnic group located in the south of the state of Louisiana. The Cajuns are the descendants of the French who lived in Acadia (border between the US and Canada), and who were deported to Louisiana with the arrival of the British in the 18th century.

Like Creole cuisine, also typical of the southern United States, Cajun cuisine is the result of the crossing of European cultures that began to leave their mark on the region. Spanish, Italian and French influences, among others, have given rise to one of the most elaborate and refined cuisines in North America.
