Also known as cancha or cancha serrana - so the name means corn for roasting, is a typical and very popular snack/food in the Andean countries. This type of corn does not pop like popcorn when roasted, but bursts inside. It is a delicious accompaniment to any meal or just with an ice-cold beer - it is also often served with Peru's national dish Ceviche.
Preparation: Fry in hot oil until they pop.
