Pasilla chili is the dry version of chilaca chili.

It is used in Guatemalan and Mexican food, especially in soups and sauces (such as "el mole en plátano" in Guatemala or in "mole poblano" in Mexico).
It is very popular as an ingredient in many sauces, such as "salsa borracha", in various types of mole and marinades and in various beef, pork and chicken stews.
Sliced and fried, it is a classic accompaniment to the "sopa de tortilla" widely used in Mexico City. It also works very well as a stuffed chili.

In Oaxaca it is called Mexican pasilla or chili pasilla from Mexico.
