This large white corn is used throughout Latin America, and in each country or region it changes its name, such as in:

  • In Mexico it is known as white corn as pozole, and from this corn is made the nixtamalized flour on which tortillas and tamales are made.
  • In Venezuela it is known as mute, and in several regions with this corn, the pre-cooked flour for arepas is made.
  • Peru, Bolivia, Ecuador and Chile are known as mote corn and this corn is used in soups, stews and to make drinks, when it is ground, the flour is made into tamales.
  • Hominy is also made with this corn, which is consumed in the North Western region of Argentina, in a typical dish called locro.
