About Albilla Grape.
Our Albilla grape, as we call it in Peru, is the famous Palomino Fino grape originally from the Andalusia area in southern Spain.
In the world it receives different names such as: Albán, Albar, Albillo de Lucena, Golden Chasselas, Jerez, Listán de Jerez, Listán Blanco, Listán Común, Manzanilla de Sanlucar, Palomina Blanca, Palomino, Palomino Macho, Palomino Pelusón, Xeres, among others . The name Palomino was used in honor of Fernán Yañez Palomino, a knight who served King Alfonso X of Castile in the 11th century. It is estimated that this variety was introduced to the Canary Islands at the end of the 15th century, and surely for this reason it is one of the strains that arrived in Peru with the conquest. You will remember that the Canary Islands were a key place for the supply of vine shoots for the ships that set sail for the new world. It is important to specify that despite receiving the name Listán, it does not mean that it is the white version of the Listán Prieto (called Negra Criolla in Peru), also known as Palomino Negra, although their DNA profiles do not exclude them from having a close genetic relationship.
Albilla is a white grape, which has large conical-shaped clusters and medium-sized berries with thin greenish-yellow skins. They are very productive vines, it is a grape with slightly expressive aromas among which descriptors of peach, green apple, pear, lime and white flowers stand out.
Pisco Albilla is unctuous and velvety, it is an excellent grape to assemble a Pisco acholado, it gives that complement of complexity to the assembly with other varieties.
