Tamale flour is a product derived from dried corn, mainly used in the preparation of tamales. The term “tamal” has its roots in the Nahuatl language, where it was known as “tamalli”, spoken by the Mexica in the Mesoamerican region. This traditional dish is a corn dough coating filled with various ingredients, such as meat, vegetables, sauce, among others, which is steamed wrapped in corn or banana leaves. In the Andean region, a similar dish is called “humita”, a word that comes from Quechua. Humitas are also made with corn dough, but they are usually filled with cheese, corn and local seasonings. Both tamales and humitas are an important part of the gastronomy of their respective regions, offering a delicious combination of flavors and textures that reflect the cultural and historical richness of Latin America.
