Nixtamalized corn flour is used in the production of these tortillas and not conventional corn flour. For Nixtamal, maize is boiled in lime in water, uncovered and then ground. This is a very old process among the people of Mesoamerica and gives corn, and therefore also tortillas, a special taste.

Komali is not manufactured in Mexico, but it sources 100% GMO Free corn from Mexico.
