Guajillo chili is very popular in the Mexican cuisine. It is obtained by drying mirasol pepper (Capsicum annuum). It is mainly used ground in sauces, marinades, adobos and stews.

Guajillo chilies have a reddish brown color, quite dark, and a thin, smooth and shiny skin. As for its taste, it is generally defined as sweet and somewhat fruity.
