Mirasol is the sun-dried version of the well-known yellow chili (Capsicum baccatum). Due to the sun-drying process, the chili has a wonderful smoky flavor. It is used in a variety of Peruvian dishes, often soaked and mixed to make a base for a paste.
Ideal for Ají de Gallina.
