Panca chili (Capsicum chinense) is also known as ají especial, special chili, and is, together with the yellow ají amarillo, among the most widespread chilies in Peru. There is a reason for this: It has a fruity and aromatic smoky taste and a mild lingering heat, which gives the raw materials a deep fullness of taste and a nice red color. The 8-13 cm long chilli is mainly used in its dried version, where it takes on an almost reddish, chocolate-like colour.

Use: For marinating meat, fish and shellfish. Ají panca is also good in stews and soups and a perfect match in the barbecue kitchen, where it dresses grilled chicken, pork etc. In Peru, it is also used in traditional dishes such as picantes, chupes, anticuchos, adobo and the shellfish soup parihuela.
